Recipe Overview
A simple, four-ingredient pancake recipe with banana, oats, and eggs, lifted with PurQ 100% Plum Powder. A wholesome start to the day.
Ingredients
- ⅓ cup rolled oats
- 2 eggs
- 1 banana
- 10 g PurQ 100% Plum Powder
- Optional toppings: 1 tbsp syrup of choice, sliced banana
Method
- Blend rolled oats and PurQ 100% Plum Powder together to form a fine flour.
- Whisk the eggs in a bowl.
- Add banana and mash with a fork, then stir to combine with the eggs.
Tip: For a smoother batter, blend banana and eggs with the oat–plum mix instead. - Stir the dry ingredients into the wet to form a batter.
- Heat a frying pan over medium heat with a little oil (coconut oil works well).
- Spoon a third of the batter into the pan. Cook until golden underneath, then flip and cook the other side until golden.
- Repeat with the remaining batter.
- Serve warm with syrup and/or extra banana.
Why it works
Banana adds natural sweetness, oats provide fibre, and eggs give protein — while PurQ 100% Plum Powder adds a subtle fruit twist and colour.
Tip
For extra flavour, sprinkle a little cinnamon into the batter before cooking.
