Recipe Overview

A rich, no-bake slice that blends beetroot, cacao, and PurQ 100% Queen Garnet Plum Powder for a naturally vibrant treat. Perfect for sharing — or keeping all to yourself.

Ingredients: 

  • 1 small beetroot, peeled and diced
  • 2 cups shredded coconut 
  • ½ cup raw cashews
  • 20 g PurQ Queen Garnet Plum Powder
  • ½ cup coconut oil, melted
  • 11 fresh Medjool dates, pitted
  • ½ tsp vanilla bean paste
  • 25 g raw cacao powder
  • 100 g white chocolate, melted
  • 1 tbsp coconut oil

Method:

  1. Line a small tin with baking paper.
  2. Place beetroot, coconut, cashews, PurQ Plum Powder, and cacao powder in a food processor. Blend until it resembles fine crumbs.
  3. Add dates, vanilla, and melted coconut oil. Blend again until the mixture comes together.
  4. Press mixture evenly into the prepared tin. Chill in the fridge.
  5. Stir together melted white chocolate and coconut oil, then drizzle over the slice.
  6. Refrigerate for at least 2 hours until firm. Slice and serve.
